400 ml warm water
1 package dried yeast
1 tsp honey
750 g flour
1-2 tsp salt
Preparation
Mix the warm water, the yeast, and the honey. Let it rest for 30 minutes and let the yeast "come back to life". It will develop bubbles first, and then foam. It is dead when it doesn't. Mix the flour and the salt together. Add the wet stuff then, cover it with a cloth to keep in the air, and let it rest until the dough has doubled in size. That normally takes about an hour. Fold the dough to release it from the floor. Don't work it too much. Put it on a baking tray and bake it for 50 minutes at 200 °C, not longer in any case. It will get too hard then. Remove it from the oven and the baking tray. Cover it with a cloth and let it rest for 4 hours. The ground of the bread might "sweat". Turn it around if it does that. Your bread is ready to enjoy.
You can freeze it if a loaf is too much for you. Just take it out from the freezer before you go to bed. It will be defrosted the next morning.
