I can bore you with my CV. But I will bore you with why food and knowing about the facts is so important to me instead.

I was born in Romania, lived for 30 years in Germany, an moved in 2022 to Ireland. The surrounding might have changed, but food doesn't. The receipts yes. But the food itself? No. So, it gave some stability to me.

 

How do I eat? Mainly whole food, and plant based. This means no added oils, meat, and dairy sometimes. But I eat sometimes with oil. I can replace it most of the time with vegetable stock or hummus without tahini, but it does not always work. Tell me how to do popcorn and crisps! This way of eating allows meat and dairy in small amounts. I got into that topic. After that I must say thank you, but no, thank you.

 

I also have one of the 4 versions of MS. I decided because of that, that the fat occurring naturally is enough for me. Avocados and nuts have for example plenty of it in them. The same comes for sweet things. I know that the sweetest thing on earth is sugar. But it also favours inflammation. And does other negative stuff. Just to quote someone from a documentary I have watched: "Sugar might be white, but its soul is black." I agree without discussion to this.
